1. Quick, Easy & Delicious Tacos
Add to Crockpot - Uncooked chicken breasts (1.5 lbs.) with a packet of low-sodium taco seasoning & water.
Allow to cook on low-heat for 6-7 hours. Once done cooking, chicken should shred easily. Add chicken to whole grain taco shells or whole wheat or low-carb tortillas. Dress up tacos with favorite toppings, lettuce, salsa, 2% shredded cheese, guacamole etc...
2. Chicken Tortilla Soup
Add to Crockpot - 2-3 uncooked chicken breasts placed on bottom. Add: 1 can diced tomatoes, 1 can red enchilada sauce, 1 med chopped onion, 1 4 oz. can green chilies, 1 clove minced garlic, 2 cups water (might want to use less depending on preferred consistency), 1 can chicken broth, 1 bag frozen corn, 1 tsp cumin, 1 tsp salt, 1 tsp chili powder, 1/4 tsp black pepper. Cook on low all day. Shred chicken & add any desired toppings.
